Mathematical models combined with appropriate numerical simulations have become indispensable to make accurate predictions in industry applications, but also to optimise and control processes. Moreover current trends are moving towards the combination of Information Technologies with computational techniques. The main objective of this second edition of the AFoT Workshop is to provide a thorough introduction into the most important issues regarding the use of Information Technologies, Mathematical and Computing techniques in the context of the food sector. Topics of interest include novel ITrelated methods and tools e.g. webbased simulation and decision support systems plus all the traditional computer simulation techniques especially regarding distributed process systems, as well as signal processing techniques for advanced sensors.
