Our snails are reared in a controlled environment which ensures a high level of growth, health and hygiene. They thrive on a cereal based diet which includes thyme, marjoram and parsley to enhance their flavour. At South West Snails we take care to only use fresh ingredients. Our snails are simmered until tender in a freshly made court bouillon stock. They are then put into presentation shells with our own special blended butter fillings.
